Ingredients
- 1 cup cooked quinoa or other grain
- 1/2 cup shredded carrots
- 1/4 cup garbanzo beans or other protein
- 1/2 cup shredded cabbage
- 1/2 cup sliced tomatoes
- 1/2 cup sliced cucumber
- 1 fresh radish, sliced
- 1 teaspoon sesame seeds or poppy seeds
- Handful arugula
- Lemon slices
- Dressing
- ¼ cup tahini
- 2 tablespoons lemon juice
- 2 cloves crushed garlic
- 2 tablespoons maple syrup
- 1 tablespoon sesame oil
- 1 tablespoon tamari sauce
- 1 tablespoon water + more if needed (up to 1/3 cup)
How The Alchemy Happens
Divide ingredients into 2 bowls, arrange to your liking.
For the dressing:
Add tahini to a food processor bowl and process for about 2 minutes, then add the other ingredients and pulse until all ingredients are combined and dressing is smooth and creamy.
Drizzle dressing on your Buddha bowls, squeeze lemon juice to top off and enjoy!
